Requirements

Due to the severity of damage resulting from insufficient temperature control for certain goods, strict temperature monitoring requirements are set by the government and federal agencies to standardise a high level of safety throughout the food industry.

The FDA and HACCP regulate and control the specific requirements for storage of food products which are readily available online, but typically refrigerated cold storage areas are required to be maintained at below 5°C, and frozen areas at -18°C with logged proof of recordings made within the last 3 years.

Dry Storage

Although temperature is usually the most critical measuring parameter, in situations where bulk powders are stored, relative humidity is equally as important. High levels of humidity will cause powders to congeal, which can affect product quality or deem ingredients unusable.

Temperature monitoring is required for:

  • Standalone fridge/freezer monitoring (Typically used in retail environments such as restaurants and stores.)
  • Warehousing/processing facilities (Usually including multiple refrigerated containers, cold rooms, and/or blast freezers.)
  • Cold chain logistics (Distribution services monitoring between depots.)

Process

Cold storage systems vary in design based on storage volume and temperature range. The only parameters of interest are temperature and humidity. Goods are often placed in closed containers so that no cross contamination is possible.

Challenges

Data loggers are preferred to manual checks as they save staff time and are able to monitor out of hours activity, though this data only shows a retrospective view of what has happened overnight, often many hours after the damage has already occurred.

Default temperature monitoring technology cannot easily feed into one centralised software when in use across multiple cold storage areas, resulting in users needing to piece data together for auditing purposes.

For these reasons modern wireless technology is far more cost-effective and flexible. Utilising long-range radio telemetry enables users consistent, centralised data, and the ability to move and expand systems as and when business needs change and grow.

Monitoring Requirements

At every point in the cold storage and supply chain, precautions can be taken to minimise the effect of external conditions on the quality and stability of the products, for both internal QA and external audits by regulatory bodies.

Food must be monitored consistently to ensure that fridges and freezers are not suffering performance issues. Well-designed wireless loggers with an efficient battery management system are required for cold storage applications.

Environmental monitoring software is required to record data in a consistent manner that meets strict regulatory requirements. A centralised monitoring system allows data to be collected from all cold storage areas, so that users benefit from gap-free data throughout the entire cold chain, whilst also maintaining a clear record of data for auditing purposes.

The ability to monitor these areas automatically prevents unnecessary time spent downloading data from outdated loggers. Combined with instant alarms in real-time, this technology allows users to go about other duties until action is required (including out of working hours).

Monitoring Solutions

Wireless solutions solve many of the challenges presented during each stage of the cold storage process. A centralised monitoring system allows data to be collected from all cold storage areas, so that users benefit from gap-free data throughout the entire cold chain, whilst also maintaining a clear record of data for auditing purposes.
