Requirements

Due to the severity of damage resulting from insufficient temperature control for certain goods, strict temperature monitoring requirements are set by the government and federal agencies to standardise a high level of safety throughout the food industry.

The FDA and HACCP regulate and control the specific requirements for storage of food products which are readily available online, but typically refrigerated cold storage areas are required to be maintained at below 5°C, and frozen areas at -18°C with logged proof of recordings made within the last 3 years.

Dry Storage

Although temperature is usually the most critical measuring parameter, in situations where bulk powders are stored, relative humidity is equally as important. High levels of humidity will cause powders to congeal, which can affect product quality or deem ingredients unusable.

 

Temperature monitoring is required for:

  • Standalone fridge/freezer monitoring (Typically used in retail environments such as restaurants and stores.)
  • Warehousing/processing facilities (Usually including multiple refrigerated containers, cold rooms, and/or blast freezers.)
  • Cold chain logistics (Distribution services monitoring between depots.)

Process

Cold storage systems vary in design based on storage volume and temperature range. The only parameters of interest are temperature and humidity. Goods are often placed in closed containers so that no cross contamination is possible.

Challenges

Data loggers are preferred to manual checks as they save staff time and are able to monitor out of hours activity, though this data only shows a retrospective view of what has happened overnight, often many hours after the damage has already occurred.

 

Default temperature monitoring technology cannot easily feed into one centralised software when in use across multiple cold storage areas, resulting in users needing to piece data together for auditing purposes.
